Why temperature matters

Matcha contains three families of compounds that make its taste, and they react differently to heat:

  • L-teanina (umami, sweetness): partly degrades above 80 °C. At 95 °C the loss over 5 minutes can exceed 30%.
  • Catechins (bitterness, astringency): more soluble the hotter the water. At 95 °C extraction is 3 to 4 times what it is at 65 °C.
  • Chlorophyll (green colour): stable across the normal temperature range.

The balance between umami and bitterness depends directly on temperature. At 70 °C umami is at its peak and bitterness stays in check. At 95 °C it reverses: bitterness takes over.

How to measure without a thermometer

The pouring method: every time you pour hot water from one container into another, the temperature drops by about 10 °C. From boiling (95 to 100 °C): one pour = 85 °C, two = 75 °C, three = 65 °C. Less precise than a thermometer, but good enough most of the time.

That said, the pouring method has a margin of several degrees and depends on the vessel, the quantity and the temperature of the kitchen. If you make matcha daily, a probe thermometer costs less than two tins of bad matcha. It reaches 300 °C, far beyond anything you need.
