Why the chasen is hard to replace

The 80 to 120 bamboo prongs of a chasen create thousands of microbubbles a second when moved in a fast W. That specific physical action makes a stable microbubble foam. No other instrument reproduces the same mechanics.

The alternatives and what they actually give

  • Electric milk frother: works well for a matcha latte. It does foam, but with larger, less stable bubbles. For everyday use with no budget for a chasen, it is the best practical option.
  • Shaker with an airtight lid: matcha plus cold water (not hot), shaken for 30 seconds. Result: a cold matcha dispersed reasonably evenly. No foam. Acceptable for iced matcha.
  • Bar whisk: not enough to dissolve the matcha fully. Lumps remain.
  • Fork: not recommended. A lot of effort for a poor result.
  • Hand blender: far too much for these quantities. It oxidises the matcha and makes large bubbles. Not one for ceremonial grade.

Conclusion

If you make matcha regularly, a chasen (€10 to €18) is the best value purchase in the whole kit. It lasts months with proper care: rinse with water, dry on its stand, never in the dishwasher. For the occasional latte, a milk frother is the most practical option.

Which frother to buy

On a frother only two figures are any use: the revolutions per minute and what the whisk head is made of. Almost no listing gives the first. The Maestri House LunaFro Mini electric frother (see the price on Amazon) states 10,000 rpm, a detachable stainless steel head that washes separately and does not collect dried milk, and a rechargeable battery instead of cells.

Cheaper: the Fackelmann 13,500 rpm electric frother (see the price on Amazon) states 13,500 rpm and a steel head, and runs on two AA cells. It spins faster and costs less than half; the trade off is the batteries and a head that does not come off.

It is worth remembering what this is and is not for: it makes a decent matcha latte. It does not make usucha. The bubble a spinning head produces is larger and collapses sooner than the one eighty bamboo prongs produce, and no amount of extra rpm fixes that.
